Pie Sunday: 99.1% Pure Blue Sky Pie

You bet I went there! I am so excited for the Breaking Bad premiere tonight. In honor of one of my favorite T.V. shows premiering it's final season, I made a special pie. Walter White makes a "product" that is sky blue and 99.1% pure. Heh. Heh. I know it's silly, but I promise you it's delicious. Try this for your Breaking Bad party! 

I needed a pie with a fairly neutral color that I could dye blue. Key lime pie is just a little yellow. It's a good base for coloring. I could have made a pudding or custard pie, but there was something off-putting about eating a slice of blue goo. The lime makes the blue seem a little less terrifying for some reason.

You need:

1 1/2 c graham cracker crumbs
1/2 tsp salt
4 T butter, melted

1 egg
2 egg yolks
1 c key lime or lime juice
2 (14 oz) cans sweetened condensed milk
2 tsp lime zest
20 drops blue food coloring

1/4 c granulated sugar
1 T cornstarch
2 T water
1 drop blue food coloring

Whipped Cream:
1 T warm water
2 tsp gelatin powder
1 pint heavy whipping cream
2 T confectioners sugar

Combine graham cracker crumbs, salt and butter. Press the mixture into a 9" pie dish coving the bottom and sides. Bake at 375ºF for 15 minutes or until browned. Cool on a rack before adding the filling. Reduce the heat to 325ºF.

In a medium mixing bowl beat the eggs until smooth. Add lime juice, milk, and lime zest and mix until combined. Mix in the food coloring. Pour the filling into the prepared pie shell and bake for 20 minutes. The middle should jiggle when shaken, but not be wavy. Chill in the refrigerator for at least 2 hours.

Combine the sugar, corn syrup, and water in a small saucepan. Slowly heat to 300ºF over a medium flame. Remove from heat and stir in food coloring. Pour sugar onto a sheet of foil to cool. Once completely cool, break into small pieces.

Dissolve the gelatin powder in warm water. Whip the cream and confectioners sugar in an electric mixer until soft peaks form. Slowly add the dissolved gelatin and whip until stiff peaks form. Spoon onto pie and serve with blue sugar crunch.
